Cold Asparagus Salad

  • 4 cups water
  • 1 pound asparagus, cut diagonally
  • 2 Tablespoons soy sauce
  • 2 Tablespoons sesame seed oil
  • ¼ teaspoon sugar
  • 1 clove garlic, finely chopped

Bring water to boil in a saucepan. Drop in asparagus. Boil 1 minute. Drain; rinse with cold water.

Mix remaining ingredients and pour over asparagus.

May be kept covered in the refrigerator for about a week.

Serves 4 to 6
